The chanterelles were waving at us
With a hot, humid summer, mushrooms grew everywhere. During a weekend on forest roads, our bags were overflowing: 7 kg of mushrooms. That's how this spice was born: balsam fir, roasted buckwheat, a hint of garlic, and wild mushrooms we picked ourselves. Umami, woody, deep. Perfect in eggs, sautéed vegetables and creamy sauces.
